Corner View: Vegetable.

I'm glad to say that fresh vegetables are my biggest craving these days. Not chocolate, not ice-cream but a stick of raw carrot or tomatoes sprinkled with olive oil make my mouth watering. Fresh veggies have always been one of the main ingredient of our daily diet and I feel really lucky that I don't have to struggle to make little G. eat her peas. She loves all vegetables, changing her preferences quite often (broccoli used to be her favourites for  months, now she loves carrots and sweetcorn the most). I love all vegetables but if I had to pick the ones that I can't imagine my life without, it definitely would be: asparagus, tomatoes (of any kind), artichokes and aubergines. Yum!

Do you have your favourite vegetable?

Happy Wednesday!

  1. Such wonderful photos--truly shows off the beauty of the fresh vegetables. They are quite pretty, not just good for you. The more color in my salad the more satisfying it is both for the mind and the body.
My favorite vegetables are bell peppers: red, orange, yellow, and green---not the hot kind. One of my favorite dishes is stuffed peppers where I briefly boil the peppers, then fill them with a meat, veg., and rice mix, pour a tomatoe based sauce over them, and pop them in the often. The final touch is sprinkled cheese on top. Add some warm bread and the meal is complete.

I esp. like your photo of the squash with its flower. Lovely.

  4. My boys love broccoli (me, too!) and I have recently rediscovered brussle sprouts. I couldn't stand the taste of chocolate when I was pregnant - but wanted raw green peppers, flank steak and chicken salad sandwiches all the time!

    1. Oh, Francesca, it's true, I should post some beetroot recipes that I promised... three years ago :-). I personally love beets a lot and I even managed to convert Corrado to like them too (we have beetroot soup with beans once a week, he loves it that much!).
Can't wait to be in Liguria already...

  11. Sweetcorn, brocolli and carrots are my kiddos favourites. Always lovely when you don't have a battle every meal time and they enjoy their veg.

  13. oh, I think it is difficult to decide. I like aparagus a lot, spinach and avocado (which is considered a fruit i think). However, it really depends how it is prepared.
