Spicy Oat Biscuits Recipe.

I don’t bake a lot. To be honest, I don’t really think I have baking skills and I prefer to cook. Oh, yes, cooking… It brings me pleasure and satisfaction while baking brings me nothing but stress. If I bake a cake it is very possible it will taste like play-dough. Except for apple cake, I think. So, if I bake anything, it’s always something quick and easy. Scones, gingerbread for Christmas, apple cake and biscuits- that’s all I’ve got on my baking list. I’d love to know how to bake more but it seems like I don’t really have a heart for it. C. instead bakes really great. Thanks to his skills we don’t buy bread, he makes his own and that’s the best bread I’ve ever tasted.

But, coming back to the oat biscuits that I baked yesterday: they are such a delicious snack and it’s so easy to make them. I like their taste- not too sweet and a little spicy. The recipe, which I got from a friend few years ago in London, is straightforward and it doesn’t take a lot of time to prepare them.

Ingredients:
2 cups flour
1½ tsp baking powder
1 tsp allspice
½ tsp ginger
¾ cup sugar
½ tsp salt
2 cups oats
¾ cup butter
1 egg
2 Tbsp honey

Preparation:
Mix all dry ingredients in a large bowl. Melt butter and add to lightly beaten egg and honey. Mix wet and dry ingredients well together.
Take about 1 tsp of mixture, roll into ball and flatten. Place on baking tray and bake at 200°C for about 10 minutes.

  4. Finally someone who demystifies baking! I also find it a rather stressful activity, although I end up doing lots of it. I think it has to do with the necessity of keeping to exact measurements, whereas (my) cooking is more of a "creative" process.
